بهمنظور سترون کردن آغوز گاو و رسم منحنی دز پایندگی آلودگی اشریشیا کولای و استافیلوکوکوس آرئوس، نمونه های آغوز با دزهای صفر، 5/0، 1 و 2 کیلوگری پرتو گاما پرتوتابی شد. برای تعیین کیفیت آغوز قبل و بعد از پرتوتابی، ترکیبات شیمیایی، پروتئین حقیقی، الکتروفورز پروتئین، مقدار قند لاکتوز، مقدار پراکسید و pH نمونه های آغوز تعیین شد. دادههای آزمایشی در قالب طرح کاملاً تصادفی با استفاده از نرم افزار آماری SAS آنالیز شد. طبق نتایج به دست آمده اثر پرتوتابی بر آلودگی اشریشیا کولای و استافیلوکوکوس آرئوس معنی دار بود (05/0 p<). آلودگی اشریشیا کولای و استافیلوکوکوس آرئوس در تیمارهای پرتوتابی شده کاهش پیدا کرد و در دز 2 کیلوگری به صفر رسید. پرتوتابی گاما اثری بر ترکیبات شیمیایی، پروتئین حقیقی، ترکیب اسیدهای چرب، مقدار پراکسید، pH و الگوی زیرواحدهای پروتئین آغوز نداشت (05/0 p>). باتوجه به نتایج این پژوهش دز لازم برای کاهش یک سیکل لگاریتمی از جمعیت میکروبی اشریشیا کولای و استافیلوکوکوس آرئوس در نمونه آغوز به ترتیب 68/0 و 15/1 کیلوگری بود، بنابراین می توان از دزهای پایین پرتو گاما بدون اثرات منفی بر کیفیت آغوز برای حذف آلودگی اشریشیا کولای و استافیلوکوکوس آرئوس استفاده کرد.
