چکیده مبسوط
مقدمه و هدف:
اسید چرب لینولئیک کنژوگه (CLA) موجود در چربی شیر تاثیر مثبتی بر سلامت قلب و عروق دارد لذا تلاش ها بر افزایش این اسید چرب در شیر گاو متمرکز شده است. نشان داده شده است که یونوفرهایی از جمله موننسین در تغذیۀ گاوهای شیرده سبب افزایش عملکرد تولید شیر و توان ایمنی بدن می شوند. علاوه بر آن احتمالاً موننسین با تأثیرات مفید بر تولید شیر و توان ایمنی بدن، بر ترکیب شیر و الگوی اسیدهای چرب شیر گاوهای شیری نیز مؤثراست. بنابراین هدف اصلی از اجرای این آزمایش، بررسی تاثیر موننسین بر تولید، ترکیب و الگوی اسیدهای چرب شیر در گاوهای هلشتاین است.
مواد و روش ­ها: 4 راس گاو شیرده هلشتاین چند شکم زا (میانگین زایش 3/5)  با میانگین وزنی14 ± 507 و روزهای شیردهی 16± 91 روز در قالب یک طرح مربع لاتین چرخشی (گردان) 4× 4 به طور تصادفی به چهار جیره آزمایشی اختصاص داده شدند. جیره‌های آزمایشی شامل سطوح 0، 250، 350 و 450 میلی‌گرم موننسین در کیلوگرم ماده خشک جیره بودند. هر گاو در طی 4 دوره، تمام جیره‌های آزمایشی را دریافت کرد. طول هر دوره آزمایشی 21 روز بود که 14 روز اول هر دوره برای سازش پذیری گاوها و 7 روز آخر برای جمع آوری داده‌ها در نظر گرفته شد. جیره‌های غذایی با استفاده از نرم افزار  NRC(2001) متعادل شدند. نسبت علوفه به کنسانتره در هر چهار جیره، 44 به 56 درصد بود. گاوها روزانه دو بار دوشیده شدند و رکورد هر دو وعده به عنوان رکورد روزانه ثبت می­شد. نمونه های خوراک و پس آخور برای ماده خشک، ماده آلی، پروتئین خام، چربی خام، NDF آنالیز شدند. تولید شیر نیز در دوره 7 روزه جمع آوری داده ها به صورت روزانه ثبت گردید. در روزهای 17 و 18 هر دوره آزمایشی نمونه گیری از شیر انجام شد. الگوی اسیدهای چرب  نمونه شیر در آزمایشگاه تغذیه اداره دامپزشکی ایلام با دستگاه گاز کروماتوگرافی تعیین شد.
یافته­ ها: نتایج این تحقیق نشان داد افزودن موننسین تولید شیر خام و شیر تصحیح شده برای 4 درصد چربی را به طور معنی‌داری افزایش داد (0/05>p). همچنین موننسین، غلظت اسیدهای چرب کوتاه زنجیر در چربی شیر را کاهش داد اما بر غلظت اسیدهای چرب متوسط زنجیر و بلند زنجیر اثر معنی‌داری نداشت. افزودن موننسین غلظت اسیدهای چرب اشباع را کاهش و غیر اشباع های 18:1 (امگا-9) و 18:1 (ترانس-9) و اسید لینولئیک کونژوگه (سیس9-، ترانس-11) شیر را افزایش داد.
نتیجه­ گیری: در مجموع  این پژوهش نشان داد موننسین سبب افزایش تولید شیر، غلظت اسیدهای چرب غیراشباع، اسید لینولئیک کونژوگه چربی شیر و کاهش غلظت اسیدهای چرب کوتاه زنجیر و اسیدهای چرب اشباع در چربی شیر می شود.
