چکیده مبسوط
مقدمه و هدف: افزایش سرعت رشد جوجه­ های گوشتی برخی عوارض از جمله بیماری­های متابولیکی نظیر آسیت و عارضه مرگ ناگهانی را در پی دارد و یکی از راهکارهای پیشنهادی برای کاهش این عوارض کاهش سرعت رشد پرنده ­ها از طریق محدودیت غذایی است. از طرف دیگر منابع چربی غنی از اسیدهای چرب امگا 3 نیز اثر شناخته شده ­ای در  بهبود سلامتی دارند. آزمایش حاضر به منظور بررسی اثرات متقابل محدودیت غذایی و استفاده از روغن ماهی در جوجه های گوشتی با محوریت مطالعه اثرات بافتی بر روده کوچک و کبد طراحی گردید.
مواد و روش­ ها : تعداد 675 قطعه جوجه گوشتی نر یک روزه از سویه راس 308 در قالب یک آزمایش فاکتوریل  3 × 3 و طرح کاملاً تصادفی با 9 تیمار، 5 تکرار و 15 قطعه جوجه مورد استفاده قرار گرفتند. فاکتورهای مورد بررسی عبارت بودند از  محدودیت غذایی در سه سطح صفر، 6 یا 12 ساعت گرسنگی طی هفته اول دوره رشد و جایگزینی کل روغن جیره با روغن ماهی در سطوح  صفر، 12 یا 18 روز آخر پرورش در دوره پایانی.
یافته­ ها : محدودیت غذایی 12 ساعته طی هفته اول دوره رشد باعث کاهش مصرف خوراک و افزایش وزن روزانه شد و ضریب تبدیل غذایی در اثر مصرف روغن ماهی کاهش یافت. محدودیت غذایی باعث کاهش قطر هپاتوسیت ­ها و حجم هسته هپاتوسیت­ها و افزایش حجم سیتوپلاسم هپاتوسیت ­ها و حجم سینوزوئیدهای کبدی شد. مصرف روغن ماهی باعث کاهش معنی ­دار قطر هپاتوسیت، حجم سیتوپلاسسم و حجم سینوزوئیدهای هپاتوسیت ها و نیز افزایشی وابسته به دز در حجم هسته هپاتوسیت­ ها شد. در دودنوم و ژژنوم محدودیت غذایی باعث کاهش ارتفاع ویلی شد. نسبت عمق کریپت به ارتفاع ویلی نیز در دودنوم در اثر 12 ساعت محدودیت غذایی افزایش یافت.  مصرف روغن ماهی به مدت 18 روز در انتهای دوره پرورش باعث افزایش معنی­دار طول پرز در دودنوم شد اما در ژژنوم اثری عکس مشاهده گردید.
نتیجه­ گیری: نتایج این مطالعه نشان دادند که 6 ساعت محدودیت غذایی طی هفته اول دوره رشد، اثری منفی بر صفات تولیدی جوجه ­های گوشتی ایجاد نمی ­نماید و از طرف دیگر تغییرات قابل توجه بافتی مشاهده شده در کبد و بافت روده گواه مؤثر بودن برنامه ­های محدودیت غذایی و نیز مصرف روغن ماهی بر متابولیسم جوجه ­های گوشتی است.
