چکیده مبسوط
مقدمه و هدف: کلسیم موجود در جیره جوجه­ های گوشتی بر رشد، بازدهی خوراک، رشد استخوان، سلامت پا، عملکرد سیستم عصبی و ایمنی بدن موثر است. تامین کلسیم به مقدار کافی برای رسیدن به عملکرد مطلوب در جوجه­ های گوشتی امری حیاتی است. جهت تامین دقیق نیاز طیور به کلسیم می­بایست از میزان زیست­فراهمی کلسیم موجود در مواد خوراکی و منابع کلسیم آگاهی داشت. از این رو آزمایشی به­منظور ارزیابی زیست­ فراهمی کلسیم برخی از کربنات کلسیم­های تجاری و تاثیر آن بر عملکرد و ویژگی­های فیزیکی و شیمیایی استخوان در جوجه­ های گوشتی انجام شد.
مواد و روش ­ها:. ابتدا چهار نمونه کربنات کلسیم تجاری که بیشترین سهم تولید در ایران را داشتند تهیه و سپس مطابق روش­های استاندارد مقادیر کلسیم و عناصر سمی، و میزان حلالیت در اسید کلریدریک 2/0 درصد تعیین شد. با توجه به شاخصه­ های اندازه­ گیری شده، دو کربنات کلسیم معدنی با نام­های تجاری اطلس و البرز که حلالیت بیشتری داشتند انتخاب و میزان زیست­ فراهمی کلسیم با استفاده از 180 قطعه جوجه نر گوشتی با روش منحنی استاندارد برآورد شد. هر یک از جیره ­ها­ی غذایی با 6 تکرار و 5 پرنده در هر تکرار به مدت دو هفته از 7 تا 21روزگی در اختیار جوجه ­ها قرار گرفت.
یافته ها: نتایج نشان داد که بین کربنات­های کلسیم مورد آزمایش بالاترین ضریب حلالیت در اسید را به ترتیب کربنات اطلس و کربنات البرز داشتند و مابقی کربنات­ها از انحلال­ پذیری پایین­تری برخوردار بودند (0/01>p). بالاترین میزان کلسیم در کربنات اطلس (37/8%) و کربنات البرز (37/13%) بود. مابقی نمونه­ ها محتوی کلسیم کمتری  داشتند. کربنات­ های  اطلس و  البرز کمترین مقادیر عناصر سمی را داشتند. کربنات کلسیم کلسی­پیور به عنوان استاندارد استفاده شد. زیست­ فراهمی نسبی برآورد شده بر اساس وزن بدن برای کربنات اطلس، 99 درصد و برای کربنات البرز، 98/6 درصد بود. زیست ­فراهمی نسبی برآورد شده بر اساس ضریب تبدیل غذایی برای کربنات اطلس ، 121/7 درصد و کربنات البرز ، 92/8 درصد بود. زیست­ فراهمی برآورد شده بر اساس خاکستر استخوان درشت­نی در کربنات اطلس، 9/111 درصد و کربنات البرز، 106 درصد بود. زیست­ فراهمی نسبی برآورد شده بر اساس محتوای کلسیم استخوان درشت­نی در کربنات اطلس  ، 101/4 درصد و برای کربنات البرز، 5/89 درصد بود. زیست­فراهمی برآورد شده بر اساس استحکام استخوان در برابر شکستگی درشت­نی در کربنات اطلس ، 9/108 درصد و در کربنات البرز، 101/4 درصد بود.
نتیجه ­گیری: نتایج نشان داد که در کربنات­های کلسیم اطلس و البرز به­ دلیل حلالیت بیشتر و زیست­ فراهمی بالای کلسیم، قابلیت مصرف در جیره طیور به عنوان منبع کلسیم را دارند.
